Instant Pot Taco Soup

Instant Pot Taco Soup

1 1/2 - 2 lbs ground beef or ground turkey (not lean turkey)
1 packet taco seasoning
2 cans petite diced tomatoes
1 onion chopped
1 small can corn
1 can Hominy
1 can black beans, rinsed and drained
2 cans tomato sauce
water
fritos
sour cream
shredded cheddar cheese

In the Instant Pot, combine raw meat, taco seasoning and one can of diced tomatoes. Mix together and break up the meat. Make sure the seasoning gets mixed in. Set the Instant Pot to manual for 10 minutes. When done, cover valve with a towel and quick release.

Take off the lid, cancel the setting and then set to sauté mode. Choose anytime between 20-30 minutes. The idea is to have it on long enough for the other ingredients to get warm, but it doesn't have to sauté for that full amount of time. Break up the meat and add the onions and all the other ingredients, but the last three. I add enough water to rinse out the tomato sauce cans. Sauté until the onions are cooked and all other ingredients are warmed through. Top with Frito chips, sour cream and cheese.
