In honor of fall.... Sugar Kissed Apple Pie

a no fail apple pie recipe. It's no fail because I cheat and buy the crusts pre-made.

Sugar Kissed Apple Pie


Your Favorite Pie Crust - a top and bottom (Mine's Pillsbury)

Filling
1/2 cup sugar
1/4 cup Gold Medal® all-purpose flour
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
6 cups thinly sliced peeled tart apples (6 medium)
2 tablespoons butter or margarine, if desired

Topping
1 tablespoon water
1 tablespoon sugar

Heat oven to 425°F. Put one pie crust in pie plate pressing firmly against bottom and side. In large bowl, sugar, flour, the cinnamon, nutmeg and dash of salt. Stir in apples. Spoon into pastry-lined pie plate. Cut butter into small pieces; sprinkle over apples. Trim overhanging edge of bottom pastry 1/2 inch from rim of plate. Get other pie crust and place over filling and unfold. Trim overhanging edge of top pastry 1 inch from rim of plate. Fold and roll top edge under lower edge, pressing on rim to seal; flute. Cut slits in top to allow steam to escape. Brush top crust with 1 tablespoon water; sprinkle with 1 tablespoon sugar. Cover edge with 2- to 3-inch strip of foil to prevent excessive browning; remove foil during last 15 minutes of baking. Bake 40 to 50 minutes or until crust is golden brown and juice begins to bubble through slits in crust. Cool on cooling rack at least 2 hours.

All Day Apple Butter

It seems all I am doing these days that is worth reporting is cooking. So here is my latest recipe.

I made this and it couldn't have been any easier. The more varieties you use the better it will taste. I used Braeburn, Fuji, Gala, Pink Ladies, and Granny Smith.
The original recipe can be found here. In my recipe below I adjusted the amounts of spices the original recipe called for.

All Day Apple Butter

5 ½ pounds apples - peeled, cored and finely chopped
1 ½ cups sugar
1 – 1 ½ teaspoons ground cinnamon
1/8 teaspoon ground cloves
1/4 teaspoon salt

Place apples in a slow cooker. Combine sugar, cinnamon, cloves and salt; pour over apples and mix well. Cover and cook on high for 1 hour. Reduce heat to low; cover and cook for 9-11 hours or until thickened and dark brown, stirring occasionally (stir more frequently as it thickens to prevent sticking). Uncover and cook on low 1 hour longer. If desired, stir with a wire whisk until smooth. Spoon into freezer containers, leaving 1/2-in. headspace. Cover and refrigerate or freeze.

Apple Bars

Apple Bars

1/2 cup melted butter
1 cup white sugar
1 egg
1 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup apples - peeled, cored and finely diced
1 cup chopped walnuts (optional)

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 8x8 inch baking pan. In a large bowl, mix melted butter with sugar and egg. Mix in flour, baking soda, and cinnamon, and then stir in apple and walnuts. Spread batter into prepared pan. Bake for approximately 40 minutes, or until a small knife inserted in the center comes out clean.
